Lobster Mac and Cheese
Coastal town, childhood friends, found family = the comforting taste of mac and cheese. Throw in a bit of lobster to add that coastal, seaside touch.

Ingredients
● 2 10 to 12-ounce uncooked Main lobster tails, or 4 smaller tails
● 1 cup panko breadcrumbs
● 9 Tbsp unsalted butter divided
● ¼ tsp OId Bay seasoning
● Small handful of parsley
● ½ medium shallot
● 2 large cloves of garlic
● 8 ounces of sharp white cheddar cheese
● 5 ounces of Gruyère cheese
● 2 ounces Parmesan cheese
● 1 lbs dried cavatappi, gemelli, or elbow macaroni pasta
● 2 Tbsp dry white wine
● ⅓ cup all-purpose flour
● 3 ½ cups whole milk
● ½ tsp kosher salt
● ¼ tsp red pepper flakes
Instructions
1. Thaw lobster tails. Arrange the oven rack in the upper third of the oven and preheat to 450 degrees. Coat a 9x13-inch baking dish with cooking spray.
2. Place breadcrumbs in medium bowl. Melt 3 Tbsp of butter in the microwave then transfer 2 Tbsp to the bowl with the breadcrumbs and toss until combined
3. Prepare lobster tails - Using kitchen shears and starting at the thicker end, cut down each side of the tail where the feelers meet the shell. Remove and discard the feelers to expose the tail meat. Place the tail cut side up on a rimmed baking sheet.
4. Brush the remaining butter on the tails. Sprinkle on the Old Bay seasoning and bake until mostly cooked through, about 10 to 12 minutes. Remove from the oven and let cool. Reduce oven temperature to 375.
5. Bring a pot of salted water to boil. Finely chop parsley leaves into about 3 Tbsp. Mince ½ shallot and both garlic cloves, placing them in a small bowl.
6. Grate the cheeses - Gruyère and sharp white cheddar - on the large holes of the grater and place in the same bowl.
7. Grate Parmesan cheese using the small holes, for about 1 cup worth of cheese. Put half the parmesan in the bowl with the breadcrumbs, mix to combine, and the other half with the other cheeses before also mixing to combine.
8. Cook 1 lbs of dray pasta using the boiling water according to the package. Drain the pasta, then dry the pot.
9. Remove lobster meat from shells and chop into ½ inch pieces.
10. Add 2 tablespoons of unsalted butter to the pot and melt over medium heat before adding the shallots, garlic, and salt and cooking for about 3 minutes.
11. Add the white wine and cook until mostly evaporated, about 3 minutes. Then add the remaining butter. Once melted, add ⅓ cup flour and whisk until well combined. While whisking, pour in 3 ½ cups whole milk and bring to a boil.
12. Reduce heat to a simmer and, while whisking, gradually add the cheese mixture, kosher sale, and red pepper flakes.
13. Once the mix is back up to a simmer, add in the pasta and stir until completely coated. Add the lobster meat and stir until combined.
14. Add the mixture into the baking dish and sprinkle the parmesan breadcrumbs across the top.
15. Bake until breadcrumbs are a golden brown and the edges are boiling - about 2- to 30 minutes. Let cool for 10 minutes before serving.

This light and flavorful drink is the perfect cocktail to have while after enjoying a stroll along the pier, or a day at the beach.

Ingredients
● 2 teaspoons kosher salt
● 1 medium lime
● Ice
● 1 medium red or pink grapefruit
● ¼ ounces of agave nectar or simple syrup
● 2 ounces cold sparkling water or club soda
Instructions
1. Spread the kosher salt evenly on a plate. Halve the lime, then cut 1 lime wedge and run it over the edge of your glass to moisten it. Invert glass in the salt for a salted rimmed glass.
2. Halve the grapefruit and juice until you have about 2 ounces of grapefruit juice. Add juice to a cocktail shaker. Juice the remaining part of the lime until you have about ½ ounce of lime juice. Add it to the shaker. Add 2 ounces of blanco tequila and ¼ ounce of agave nectar or simple syrup.
3. Fill the shaker halfway with ice and shake until combined
4. Strain into the glass and top with 2 ounces of sparkling water. Garnish with a slice of grapefruit.

Ingredients
● 600g Frozen raspberries
● Juice from 3 lemons
● 225 ml soda water
● Ice
● 3 tbsp agave nectar or simple syrup
Instructions
1. Put all the ingredients in a blender or food processor. Blitz until it is a smooth slush.
2. Divide between cups and serve.
