Ingredients:
Crushed Ice
2 oz. absinthe
2 dashes anisette
½ oz. simple syrup, optional
Club soda, for topping
Fresh mint, for garnish
Preparation:
- Fill a glass halfway with crushed ice.
- Add the absinthe or Herbsaint and anisette to a cocktail shaker filled with ice, as well as the simple syrup if you prefer a sweeter drink. Shake to chill.
- Strain into the prepared glass. Top with club soda and more crushed ice.

Antipasto Platter - A cold dish with a little bit of everything and anything
Ingredients:
1 jar (24 ounces) peperoncini, drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2 cups halved fresh mushrooms
2 cups halved cherry tomatoes
1/2 pound provolone cheese, cubed
1 can (6 ounces) pitted ripe olives, drained
1 package (3-1/2 ounces) sliced pepperoni
1 bottle (8 ounces) Italian vinaigrette dressing
Lettuce leaves
Directions:
- In a large bowl, combine pepperoncini, beans, mushrooms, tomatoes, provolone cheese, olives and pepperoni. Pour vinaigrette over mixture; toss to coat.
- Refrigerate at least 30 minutes or overnight. Arrange on a lettuce-lined platter. Serve with toothpicks.

Berry Fool - A Frozen Treat
Ingredients:
1/2 cup trimmed and coarsely chopped fresh strawberries (about 4 medium)
1 cup cold heavy cream
3 tablespoons powdered sugar, divided
1/2 teaspoon vanilla extract, 1/8 teaspoon almond extract, or both
1 1/2 cups frozen raspberries
Sliced fresh strawberries, for garnish (optional)
Directions:
- Place 1/2 cup coarsely chopped fresh strawberries in the freezer while you prepare the other ingredients.
- Beat 1 cup cold heavy cream, 1 tablespoon of the powdered sugar, and 1/2 teaspoon vanilla extract with the whisk attachment in a stand mixer on medium speed until stiff peaks form, 5 to 6 minutes. (Alternatively, whisk in a large bowl by hand.) Refrigerate while you prepare the fruit.
- Pulse the chopped strawberries, 1 1/2 cups frozen raspberries, and the remaining 2 tablespoons powdered sugar in a food processor until finely chopped and resembles a coarse meal, 15 to 20 (1-second) pulses.
- Transfer to the bowl of whipped cream and gently fold together with a flexible spatula until just combined. Divide between 4 to 6 serving cups. Garnish with sliced strawberries if desired. Serve immediately.
